Try this healthy as well as yummy recipe during your Navaratri Fasts!

Ingredients for Quinoa Paneer Tikki:

  • Grated paneer – 1 cup
  • Oil / ghee for brushing tikkis
  • Pressure cooked quinoa – ½ cup
  • Pressure cooked Plaintain / raw banana – washed, pricked and cut in half
  • Roasted peanuts without skin – ½ cup
  • Mint leaves – handful
  • Coriander leaves with tender stem –a handful
  • Green chillies – 2-3
  • Grated ginger – 1-2 tbsp
  • Cumin powder – 1 tsp
  • Garam masala –½ tsp
  • Lemon juice – 2 tsp
  • Black pepper powder
  • Salt

Chutney:

  • Mint leaves – ½ cupCoriander leaves with tender stem –½ cup
  • Green chillies – 2
  • Grated ginger – 2 tbsp
  • Cumin powder – 1 tsp
  • Salt
  • Curd – 3 tbsp

Serving size: 10-12

Preparation of Quinoa Paneer Tikki:

  1. Pressure cook quinoa with salt. Pressure cook plantain. Keep aside and let them cool down completely.
  2. Blend mint, coriander, peanuts and green chillies together.
  3. Grate paneer.
  4. Peel and grate the cooked plantainto avoid lumps.
  5. Mix all ingredients and add the spices. Adjust seasonings. Make 1.5-2” thick tikkis and shallow fry them gently flipping mid way.
  6. Blend everything mentioned under chutney. Adjust the salt.
  7. Enjoy with a salad on the side!

Quinoa is loaded with nutrients, rich in all nine essential amino acids. It contains flavonoids quercetin and kaempferol. It is very high in fiber and protein, has a low glycemic index.
