When cooking with olive oil, one needs to take many factors in consideration like its smoke point, storage, freezing, etc.
Smoke Point and Olive oil:
All oils have got their different smoke point. Basically the term smoke point refers to the temperature at which the cooking oil or fat starts to break down. The substance smokes or burns, giving the food an unpleasant taste. Olive oil has got a low smoking point, thus it is not advisable for deep frying. Extra virgin olive oil may be best in flavor as compared to other types, but it has a strong flavor that it can change the taste of the food.
Depending on the type, the smoke point of the oil differs. High quality extra virgin oils have got high smoke point and thus can be used for deep frying. This is an excellent choice but also an expensive one. Low quality olive oils have low smoke point which are reasonable and also can be used for cooking on moderate flame, steaming but not deep frying.
There are many myths regarding cooking with olive oil; Cooking diminishes the nutrients in the oil or Heating may convert it to saturated fatty acids or trans-fats. The fact is that, cooking on moderate flame or steaming helps break down the nutritive value. On the other hand if it’s heated on very high flame or used for deep frying will diminish the nutrients.
Thus, cooking with olive oil (moderate flame), using it for salad dressing, sauces, etc is advisable.
Storing Olive oil:
Always store olive oil in a dark, cool place. When olive oil is exposed to light, oxygen and heat it may become rancid. Thus proper storage becomes very important. Also the type of the olive contributes to its shelf life. Extra virgin olive oil can last up to 3 months in a sealed bottled. Storing Olive oil in a dry, dark or closer to it and cool place increases the shelf life.
Olive oil can be used in salad dressings, steaming fish, low flame cooking, sauces, pickles, etc.
