This healthy, fruity, light, refreshing cold muskmelon soup is a summer favorite recipe. Enjoy it as a fantastic breakfast or as a dessert soup.
1 medium muskmelon, cut into chunks
½ cup yogurt
1 tbsp grated fresh ginger
Juice from one medium size lemon
1 or 2 pinches of salt
Dash of ground cinnamon (optional)
A few fresh mint leaves, chopped
A drizzle of honey (optional)
Small melon balls
Fresh basil or mint leaves
Drizzle of yogurt
1. Add all ingredients to a blender and blend until well combined.
2. Refrigerate until properly chilled. It’s worth the wait.
3. Garnish and serve muskmelon soup.
